Prep: 10Cook: 6Total: 16 minutes
Servings: 8 1x

Ingredients

  • Olive oil
  • 2 pounds ground beef
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced (or 1 teaspoon garlic powder)
  • 2 large carrots, diced
  • 3 celery stalks, diced
  • 4 medium Yukon Gold potatoes, cut into 1-inch chunks
  • 1 (28-ounce) can diced tomatoes
  • 3 tablespoons tomato paste
  • 3 cups beef broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon fine sea salt, plus more to taste
  • ½ teaspoon ground black pepper
  • 1 bay leaf
  • 1 cup frozen corn
  • 2 teaspoons red wine vinegar, optional but recommended
  • Shredded cheese, optional for serving

Instructions

  1. Brown: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the onions and cook until soft, about 3-4 minutes. Add the ground beef and cook until browned and no longer pink. Add the garlic and cook for 30 seconds, until fragrant. Drain any excess grease if needed.
  2. Combine: Transfer the beef to a 6 to 8-quart slow cooker. Add the carrots, celery, potatoes, diced tomatoes, tomato paste, beef broth, Italian seasoning, paprika, sea salt, black pepper, and bay leaf. Stir until fully incorporated.
  3. Cook: Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until the potatoes and carrots are fork tender. During the last 20–30 minutes of cooking, stir in the frozen corn.
  4. Stir and taste: Uncover and stir in the red wine vinegar. Remove the bay leaf and discard. Taste and add more salt or pepper if needed.
  5. Serve: Ladle into bowls and serve with shredded cheese on top.

Notes

  1. Adding the red wine vinegar is optional, but it helps enhance the beef and tomato flavors without making the soup taste acidic.
  2. Taste before serving. Depending on your broth, you may need a little more salt. Taste the soup after cooking and adjust the seasoning as needed.
  3. Make it for meal prep! This recipe makes a big batch. You can freeze extra portions in large glass containers for a quick, homemade meal whenever you need one.
  4. This soup is intentionally not spicy. For more of a kick, add more black pepper or ½ teaspoon cayenne pepper.
